Shepherd's Pie
This recipe is from my cousin Meg

1 (22-ounce) package of frozen mashed potatoes
1 pound ground beef
1 small onion chopped
½ cup frozen sliced carrot, thawed
2 tabs all purpose flour
2 teaspoons salt- divided
1 teaspoon pepper- divided
1 cup beef broth
1 large egg, lightly beaten
½ cup (2 ounces) shredded cheddar cheese
Garnish- chopped parsley

Cook potatoes according to directions and set aside. Cook beef and onion in a large skillet over medium high heat 5 to 6 minutes, stirring until beef crumbles and is no longer pink. Drain and return to skillet; add carrot. Stir in flour, 1 tsp salt and ½ tsp pepper. Add broth and cook, stirring constantly, 3 minutes or until slightly thickened. Spoon mixture into a lightly greased 11 x 7 inch baking dish. Stir together potatoes, egg remaining 1 tsp salt, and remaining ½ tsp pepper. Spoon over beef mixture. Bake at 350 for 25 min. Sprinkle with cheese and bake 5 more min. Garnish if desired.

  1. hey jenny! just had to tell you we met your AWESOME cousin Katie... she was a nurse in the PICU and although she wasn't Parker's nurse she helped out a few times and today we figured out how we "knew" each other! She also was in the same class as C's brother at Kirkwood but we connected you first b/c we both had on WG gear! :) She was amazing and SO good at what she does! Thank her again and again for me please!
